Prosciutto & Fig Salad

INGREDIENTS :

  • 9 fresh figs, halved
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon maple syrup
  • 150g mixed salad greens, washed and dried
  • 80-100g blue cheese, crumbled
  • 6 slices prosciutto or crispy fried bacon

Balsamic Dressing :

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sugar
  • Salt and pepper

DIRECTIONS :

  1. Brush figs with combined vinegar and maple syrup. Place under a heated grill for about 5 minutes or until lightly golden and starting to soften. Cool.
  2. Combine dressing ingredients and toss through salad greens. Divide between 6 serving plates. Top each plate with 3 fig halves and a sprinkling of blue cheese.
  3. Fold prosciutto and place on top or sprinkle with crumbled bacon.
