Lemon Slice



Base :

  • 1½ cups plain flour
  • ½ cup sugar
  • 150g cold butter

Filling :

  • 1⅓ cups sugar
  • Finely-grated rind of 1 lemon
  • 4 eggs
  • ¾ cup lemon juice
  • ¼ cup plain flour


  1. Preheat oven to 150°C. Line a 30cm x 24cm sponge roll or baking tin with baking paper.
  2. For the base, mix flour and sugar together in a bowl. Grate over butter and mix in with your fingertips until mixture resembles fine crumbs. (Alternatively, blend ingredients together in a food processor until fine crumbs.) Press into prepared tin and bake 15 minutes until lightly golden.
  3. For the filling, beat together sugar, lemon zest, eggs, lemon juice and flour until well mixed. (Alternatively, process ingredients together in a food processor.) Pour over the cooked base and return to oven for 25-30 minutes until set. When completely cool, dust with icing sugar and cut into slices.
