Lemon Butter

INGREDIENTS :

  • 1 cup sugar
  • 2 tablespoons butter
  • 2 eggs
  • ½ cup lemon juice

DIRECTIONS :

  1. Cream butter, sugar and eggs. Add lemon juice and mix well.
  2. Place mixture into a saucepan and cook steadily until it thickens. Allow mixture to cool slightly.
  3. Pour into sterilised jars and keep refrigerated.
